Preparazione:Si porta ad ebollizione una quantità d’acqua sufficiente aromatizzata con le verdure. Al momento del bollore vi si tuffa il manzo, e dopo un’ora la punta e la coda di vitello. Il bollito piemontese può essere accompagnato dal classico bagnet verd piemontese oppure dal bagnet ross o da una salsa agrodolce di peperoni, o anche da mostarda di frutta.
